1. Vegetable Nuggets

Nuggets are always a hit with kids and even adults. Practical, easy, quick and delicious, they are great to complement your lunch or family afternoon snack. You can call your little one to help, because today is the day to prepare the vegetable nuggets!


You will need:

1 1/2 cups potatoes peeled and cut into cubes;

1/2 cup peeled and diced carrots;

1/2 cup peeled and diced zucchini;

1/2 cup cauliflower;

1 teaspoon of salt;

1/2 onion;

3 cups water;

1 tablespoon of sweet sprinkles;

1/2 cup finely chopped manioc flour;

3/4 cup of manioc flour flocked;

Spices and herbs to taste.


Method of preparation:

In a pan, put the water, carrot, herbs and onion and simmer over medium heat for about 10 minutes.


Add the potatoes, zucchini, cauliflower and salt. Cook for another 15 minutes, or until the water in the pan almost dries.


Knead, coarsely, cooked vegetables with the help of a fork. Add the sweet sprinkles and fine manioc flour, lower the heat and stir until the mixture turns into a thick dough. Transfer to a dish and let cool slightly. Put the flour flocked on a plate. Model the nuggets as desired, leave them not too thick, and wrap in the flour so that they are all breaded.


Arrange the nuggets in a greased baking dish and drizzle with a little olive oil. Preheat oven to 250 degrees and bake until golden brown.
